Things HAS WORSENED, let’s turn the trend around
In those years those who thought of sustainability were seen as a “visionary” but, alas, he was right!
At the end of 2018, the contracted market numbers say that the sector is worth 6.5 billion euros, with as many as 850 million meals per year. Almost half of these meals only in school catering where the choice is not there and, worse, the menus are not adequate for their needs. Quality and circular economy in canteens;
On this enormity of food, it is estimated that 30/35% is “thrown away” and not reused. Think about how much food waste and undernourished people.
If you then analyze the menus and the origin of the raw materials, we understand why the saying “in the canteen you eat badly” is instead a sad reality. How is it possible to achieve quality and wholesomeness with an average price of meals from €3.80/€4.50?
And is it acceptable that menus should be developed according to economic criteria and not of real need for consumers?
Of all this, the only people responsible are those who publish invitations to tender often without proper knowledge of the importance of nutrition and the impact of individual accessories or food on the environment (LCA).
