Simple, already in 2008, the trade associations had pointed out that the quality and related supply chain involving Collective Catering was the result of poorly drafted contracts and were a danger to public health, especially school and hospital health (Source:  Republic [12 November 2008]).

Even then, according to Angem-Fipe and Ancst-Lega- coop – the associations in the collective catering sector – there were about 260 million meals distributed in Italian canteens every year managed by economic operators who, winning the various contracts, went in search of raw materials and poor cooking and management procedures, causing it to fall on consumers. Things HAS WORSENED, let’s turn the trend around

In those years those who thought of sustainability were seen as a “visionary” but, alas, he was right!

At the end of 2018, the contracted market numbers say that the sector is worth 6.5 billion euros, with as many as 850 million meals per year. Almost half of these meals only in school catering where the choice is not there and, worse, the menus are not adequate for their needs. Quality and circular economy in canteens;

On this enormity of food, it is estimated that 30/35% is “thrown away” and not reused. Think about how much food waste and undernourished people.

And is it acceptable that menus should be developed according to economic criteria and not of real need for consumers?

Of all this, the only people responsible are those who publish invitations to tender often without proper knowledge of the importance of nutrition and the impact of individual accessories or food on the environment (LCA).
